The Best Peanut Butter Cups Ever.

Allow me to qualify this post by saying that I absolutely HATE diets. I am not a diet person. I don’t diet. I’ve done it once and I hated it. I don’t care if they work, GIVE ME ALL THE CHOCOLATE. Right? Fist bump.


A few months ago, a woman in our church started talking about this thing she was doing and how much weight she lost and how awesome she felt and I couldn’t for the life of me remember what it was called. Skinny, Happy Woman? Trim, Skinny Lady?

I’m not going to do a review or try to convince you of it’s awesomeness. I will just say that I was totally skeptical and now I’m a believer. (ONE OF US. ONE OF US.ONE OF US.) I’ll sum it up for you, just in case you’re a little bit curious. Basically what the “diet” (which is really not a diet, but a way of life) does is teaches you to separate your fats from your carbs, so that your body processes sugar the way it was designed to do. You don’t have to cut out everything you love, you just have to learn how to eat it. If that makes sense. But sugar has to go. Which was pretty much a deal breaker for this sugar addict, but I’m coming to terms with it now.

I’ve gone from LOATHING Stevia to simply just not loving it. You get used to the flavor. And now I’m going to introduce you to my FAVORITE Trim Healthy snack. At our very first church lady Trim Healthy Mama meeting, someone made these and passed the recipe around and all of our lives were changed for the better. (Not sure who came up with the recipe. If it’s you, let me know so I can link you up!)¬† These things are super delicious, you can hardly taste the Stevia and you can eat 100 of them and not feel guilty.

Bottom Layer :
2 Tbsp coconut oil, melted
1/4 cup smooth natural peanut butter
1 tsp pure vanilla extract
1/4 cup unsweetened cocoa powder
2 packets of Stevia

Top Layer :
2 Tbsp coconut oil, melted
1/4 cup smooth natural peanut butter
1/2 tsp pure vanilla extract
1 packet of stevia

Directions :
. Line a mini muffin tray with 11 paper liners  (I use 12)
. Stir all ingredients for the bottom layer together until smooth and divide between the liners. (about half way full)
. Put the tray in the freezer on a flat surface and freeze until solid
. Stir all ingredients together for the top layer until smooth and divide on top of the set chocolate mixture.
. Return to freezer and freeze until solid.

IMPORTANT : Because these are made with coconut oil, they have to be kept frozen, otherwise they melt.
ALSO IMPORTANT : If you don’t use the natural peanut butter that has to be stirred, you’ll need to melt the coconut oil and peanut butter together so that it’ll be smooth enough to poor.
